Colorado Patent of the Month – May 2022

MycoTechnology, Inc., a Colorado-based food tech company, has set their sights on harnessing the power of mushrooms to meet the needs of the industry. Their solution is based on the natural processes of mushrooms. Mushroom mycelium act as a clean-up crew in nature, pulling out toxins from the soil and giving back nutrients to the plants. MycoTechnology harnesses this power to eliminate ingredient drawbacks, boosting flavor, and increasing nutritional value.

Recently, with this expertise, they have identified a new finally-derived sweet protein. This protein can be used to replace zero or even low-calorie sweeteners to create a more natural and nutritious solution. While there are seven previously discovered sweet proteins, these all have come from plants grown in tropical rainforests, meaning MycoTechnology’s truffle-derived sweet protein is the first of its kind. 

Following discovery, the company began experimenting with how to treat and incorporate the protein into food to provide the sweet flavor without impacting shelf stability or freshness. This required testing of cloning, purifying, stability and more. They’ve found treatment of the protein is possible to achieve a sweetening product used in baked goods, frozen desserts, drinks, yogurts, and more while providing a healthier alternative.
