Maine Patent of the Month – May 2022

Plant-based diets are growing in popularity for many reasons, from personal health to environmental consciousness. The most common food types to be made in plant-based forms include meat and dairy, from cheese to milk. Cashew, soy, and almond milk are incredibly popular. Novare Food Products, LLC are experts in the food production industry, developing tasty and healthy options for anyone.

Recently, they have formulated a plant-based yogurt that uses legumes to achieve the flavor and consistency desired. Other existing plant-based yogurts have been made with various nuts or soybeans, but these tend to have an odd flavor. They also usually have high volumes of carbs and additives to achieve the desired thickness, making them less healthy and high in calories.

Novare Food Products’ yogurt avoids this by formulating their yogurt with a combination of legumes, nuts and seeds, and soy milk to create a clean and white-label yogurt. Their formulation has legumes and seeds comprising between 60-80% of the product by weight, using their characteristics to gain the thickness needed for yogurt. This is then combined with soy milk and water, blended at high speed, and heated. Without the additives, and with the desired combination of nut types, different flavors can be achieved and actually enjoyed.
