When cooking with oil, oil vapors can be released and penetrate the atmosphere surrounding the cooking appliances. This means oil can build up in griddles, broilers, fryers and more. Since restaurants are regularly cooking with large quantities of oil, they go to extensive lengths to prevent oil build up. Kitchen Ventilation Hoods remove the grease vapors before they can become a fire hazard. Unfortunately, the cooled grease vapors can still clog the EMT (electric metallic tube) within the ventilation hood and can cause a new fire hazard.
Evergreen Tool Company, Inc. designs and manufactures industrial machinery and equipment. They have developed a solution for this oil-based fire hazard using a bushing shield. This shield provides fire detection capabilities in a commercial kitchen fire suppression system that uses detection line cables from a fusible link. The bushing shield has a guide bushing and a vapor barrier which minimizes the grease vapors and foreign contaminants from entering into the pipes or EMT. This design still allows the flexibility required for the detection line cables to slide back and forth. By simply preventing the oil vapors from building up within the EMT and pipes, the bushing allows the ventilation hood to conduct it’s usual fire prevention as well as reduce the likelihood of further risk of fire. All this without limiting the fire detection aspect of the hood.
