Washington Patent of the Month – October 2024

Rebellyous Foods has revolutionized the production of plant-based meat with a groundbreaking automated system that eliminates inefficiencies plaguing traditional methods. This innovation replaces batch-based processing with a continuous, ingredient-specific approach that streamlines production, enhances quality, and reduces costs.

The system employs three core components: an emulsifying machine, a hydrator, and a mixer. These work in harmony, continuously emulsifying, hydrating, and mixing ingredients to produce a consistent, high-quality dough. Each ingredient—whether protein, oil, water, or binding agents—is processed separately under optimal conditions before being combined. This separation minimizes excessive heat generation, a common issue in large-scale batch mixing, which often degrades texture and flavor.

By isolating and localizing chilling to critical stages, the process eliminates the need for entirely refrigerated facilities, drastically reducing operational costs and improving worker conditions. Continuous flow technology further ensures uniform mixing, avoiding the “dead zones” and dry patches typical in batch systems. The result? A scalable, efficient production method that delivers superior texture, taste, and palatability.

Beyond its technical advancements, this system addresses industry-wide challenges, such as labor-intensive processes and pathogen risks associated with chilled environments. Its automated design not only increases worker safety but also standardizes production for consistent output at scale.

Rebellyous Foods’ innovation is a leap forward for the plant-based meat industry, setting a new standard for sustainability, efficiency, and quality in food production. This cutting-edge system paves the way for making plant-based meats more accessible and appealing to the global market, bringing us closer to a more sustainable food future.

Are you developing new technology for an existing application? Did you know your development work could be eligible for the R&D Tax Credit and you can receive up to 14% back on your expenses? Even if your development isn’t successful your work may still qualify for R&D credits (i.e. you don’t need to have a patent to qualify).
